Prime Rib

We prepare our Prime Rib over East Texas Pecan logs.  Our ‘rub’ includes Rosemary, Thyme, Course Ground Tellicherry Pepper, Granulated Garlic and Flaked Sea Salt.  It is vacuum sealed straight out of the pit and retains its natural light smoke and fresh herb flavor.  A slight smoke ring indicates just the right amount of time over the Pecan coals and the taste is as good as if you were eating it while visiting with your friends at ciboVino.  When you pick up your order we'll include a recipe for the simplest and best Horseradish Sauce you've ever tasted. 

Single Servings can be heated from room temp to serving temp in your favorite sauté pan in 6 minutes or less or in the microwave in under 2 minutes. Single Servings are always packaged in a ‘boil-in-bag’ and can be submersed in simmering water for 4-5 minutes with excellent results. 

For the Half or Whole Rib Roll; preheat oven to 275º and let your Prime Rib come to room temperature inside vacuum sealed package.  Remove from package and place on grate in casserole dish and heat to the following temps depending on your desired 'doneness'.  Measure temps internally using probe style thermometer for accurate results.
